3 large carrots
1/2 chopped yellow onion
5 stalks celery chopped
5 red, yellow or russet potatos
3-4 cups shredded chicken or turkey
head of broccoli (optional)
1 Tbl minced garlic
1 tsp thyme
4 Tbls chicken boullion
salt to taste
egg flour noodles (i recommend boiling these separately and adding them to slow cooker at the end…mine got a little over cooked and feel apart 😐 )

*Add all the ingredients to your slow cooker, fill with water until water line is about an inch over the top of the veggies.  cook on high for 4 hours or low for 6 hours.


Slow cooker meals are for winters am I right?  Just dump, and leave, so the remainder of the day you can snuggle your babies, listen to hours and hours of Josh Groban Christmas music and sip hot cocoa all while not getting out of your pajamas 😀  This may or may not have been our routine for the last 4 days

Last night we had some friends over that we haven’t seen in MONTHS!  She was pregnant at the same time i was with Harley, and we have some fun memories together.  It was raining, and the girls were starting to come down with a cold, so I thought chicken noodle soup would be a the best meal for a December night.  Not to mention Daniel’s boss gave us bags upon bags of leftover Thanksgiving turkey, chicken and ham…I’ve been trying to use them up the last week.  After chicken soup last night we’re almost through it all!  Don’t get me wrong though, it’s great being giving food I didn’t have to buy or cook haha.
Anyway—sorry I get off on tangents a lot—our friends and their baby came over last night.  We caught up, had some yummy soup-which alll the little people loved (VICTORY!)-then watched the Christmas Devotional (you can watch it HERE).  It was the perfect evening.  I’m so grateful for the friends we have near by since our families are far away.
