Garden Salad Recipe
Isn’t it silly that there’s a stigma when you hear the word “salad” You think skinny starved women, that are afraid to eat….When in reality salads can be the most filling, nutritious dishes on the planet. You just have to make sure to put in the right ingredients.
I’m sharing one of my go-to healthy loaded garden salad recipes today!

Make any salad filling and nutritious
- Use REAL greens: Iceberg lettuce seems to be the most popular lettuce for salad in America (no idea why) it’s basically crunchy water, and romaine is barely an improvement. In fact I try to NEVER have it in my fridge. It’s fine to add a little crunch, but honestly there are so many other toppings that can provide that.
Use instead Kale, purple cabbage, arugula, collard greens, sprouts, power greens, spinach etc. The darker the better. Maybe you don’t think you’re a kale fan now, but it’s amazing how your body will start to CRAVE the thick fiberous greens once you introduce them on a regular basis. (Hint: did you know your taste buds have the ability to constantly change? You can TEACH them to enjoy better for you foods) - Load up on toppings: Make this part fun. Maybe there aren’t many veggies you like now, but just start with what you do like…When I was younger and getting more adventurous with my salads, the only veggies I added were cucumbers and shredded carrots.
Now I do tomatoes, avocado, mushrooms, broccoli, bell peppers….anything! - Protein it up: This is a great way to get some good healthy proteins into your diet. Add some grilled chicken, can of tuna, shrimp, lunch meat, hard boiled eggs etc.
- Faten up: People are under the incorrect impression that fats make you fat. When in fact, it is IMPOSSIBLE for fat to turn into fat (learn more about that here). Fats are also essential for weight management, and preventing diabetes, because they keep your insulin levels normal.
I like to add some cheeses to my salads, avocados, sometimes nuts or beans/legumes, and of course I alsways add olive oil.
Salad Ingredients Used
*unless specified, all portions are to preferance.
- Spinach
- purple cabbage
- power greens
VEGGIES
- shredded carrots
- cucumbers
- bell peppers
- tomatoes
- chickpeas
- 1/2 avocado
PROTEINS/FATS
- Grilled chicken breast (the precooked packets from Trader Joe’s)
- Hard boiled egg
- Fresh mozzerella
DRESSING
- 2 Tbls Apple cider vinegar
- 1 Tbls Olive oil
- 1 tbls maple syrup (real)
- dash of cayenne pepper
SEASONINGS
- Balsamic glaze
- Pink salt
- bagel seasoning
