I was reminded while making these … of a hilarious incident that filled me laughter, bewilderment and a touch of pride towards my own kiddos.
Years ago, we were watching a friend’s child for the day. She came over early morning, so I was making breakfast. I asked “should I make pancakes?”
“yes, I LOVE pancakes!” well perfect. so I proceeded to make this protein recipe per usual in our house. (Which my kids LOVE)
And this friend’s little girl didn’t like them 😳. Then I realized…oh right, I guess most kids aren’t used to flax cakes lol. So I added some choc chips…what kid doesn’t like choc chips!?
That HELPED…until it didn’t 🙄 We use the grade B maple syrup (like straight from the tree syrup) I didn’t think it tasted that different from Mrs. Butterworth’s but apparently to this 3 year old’s sophisticated pallet, it does 😅
If that wasn’t enough, the bacon I made was turkey bacon….This poor girl gave up and ended up eating just a banana 🤷🏻♀️
But oh, it doesn’t end there….we still had lunch to get through
We normally eat Asian chopped chicken kale and cabbage salad for lunches… but after that morning I figured this little girl wouldn’t go for it. So I opted for mac & cheese
Can you believe that went wrong as well?!
We make the Annie’s Organics Mac & cheese, with andouille sausage 😋
But since it wasn’t the original mac & cheese with hotdogs…also a fail. 🤣
I was little blown away to say the least. But it makes for a fun memory. To reflect and think; “wow, my kids are pretty healthy with fairly cultured pallets.” We eat all types of ethnic foods, and the kids never shy away from trying new things.
If that means I will most likely forever be on the blacklist of that little girl, I’m okay with that 💕
High Protein Pancakes Recipe
Ingredients
- 2 cups Kodiak Pancake mix
- 2 Tbls Ground flax
- 2 cups cold water (can add more or less on consistency preferances)
- 1 tsp almond or vanilla extract (optional)
- 2 egg whites whipped until frothy (fold gently AFTER you’ve mixed first 3 ingredients)
- 1 cup fresh blueberries
Instructions
preheat skillet or pan on medium heat.
using a 1/4 cup, scoop mixture onto skillet or pan
When the batter starts to bubble, flip!
Remove from skillet.
Repeat.
We love topping with our favorite fruits in our house too!
It’s been absolutely VITAL at this time for me to not only get enough healthy calories, but especially PROTEIN! High protein breakfast foods that I like are some of the trickiest to find. Of course there are eggs, protein shakes etc. But c’mon that gets old after 9 months 😅🙄
