This yummy zucchini pasta recipe (can also be vegetarian by removing the shrimp OR fully raw vegan by making your own pesto) is an extremely filling and nutritious alternative to other pastas, this is by far one of my favorite zucchini pastas (because NO wet noodles!)

Because when you think “zucchini recipes” you typically think zucchini bread, or zucchini muffins right?  Well this if for you more savory lovers.

Even my kids love this, and it is a repeat dinner at our house!

Ingredients

  • 3 medium size zucchini
  • 1/2 cup basil pesto
  • 1 cup corn (much sweeter if raw)
  • 1/2 cup chopped marinated artichoke hearts
  • 1 cut sliced cherry tomatoes
  • handful power greens
  • 2-3 cups raw tail off shrimp
  • 1 tbl apple cider vinegar
  • salt and pepper to taste

Directions

1-Spiralize the zucchini (peeling first is optional).  No need to cook. Place your zucchini pasta in a large mixing bowl.

2-Slice the cherry tomatoes, and add them and the corn, and chopped artichoke hearts to the zucchini pasta.

3-gently mix in the pesto

4-Set aside and begin cooking the shrimp in a large skillet on medium heat.

5-When finished add the shrimp to the zucchini pasta mixture (the heat from the shrimp is what will warm the rest of the pasta.)
