“Monday Munchies” I know it’s a day late, but you’ll forgive me.  

I had theee most fun and refreshing weekend with my sister.  We haven’t been able to hang out, catch up and chill in I can’t remember how long.  One thing I forgot that I loved doing together was going out to eat…sounds simple but really, me and my sisters have always been adventurous in trying new places and ordering way too much food.  The stir fry with udon noodles that I’ve been making on repeat for months actually has a name!  I learned on one of mine and my sister’s (Kimmy, I guess I could give her a name here lol) restaurant ventures.  It’s called yaki-udon.  And it’s soooo good.  I put my own little “minimize the amount of ingredients, take out the sugars, keep it simple” twist on it like I always do.  You will lOVE this.  It’s so easy and quick, and not crazy gourmet sauce concocting is involved.  HERE YA GO!

YAKI SAUCE (makes me think “yucky sauce” lol)

3 Tbls white wine vinegar or rice vinegar
4-5 Tbls soy sauce
1-4 Tbls honey or agave nectar (if you want it sweeter, more honey/agave, for bitter & tangy, less honey-no need to add more vinegar)
*mix these all together in small bowl

THE REST

Udon noodles (I get the ones from Costco.
2-3 Bell peppers (color or your choice) chopped
1 tsp minced garlic
1 head of broccoli (roughly 2-3 cups)
1 cup mushrooms
1/2 cup shredded carrots
4 tbls olive oil
*adding peas and spinach is also delish!

GET TO WORK LITTLE CHEF (directions)

Start by chopping all the bell peppers.  Place peppers, garlic and olive oil in a skillet or wok on low heat and cover (they take the longest to cook), after 5 minutes or until they begin to soften add the broccoli, mushrooms, carrots and peas and spinach if using.
Stir to make sure the olive oil coats all the veggies.  Place udon noodles ON TOP of all the other veggies.  *DO NOT stir at this point.  The noodles will need to warm and cook with the veggies, and if the noodles have to sit on the bottom of the pan for long, they will start to obnoxiously stick to the bottom. 
With the noodles sitting on top of all the veggies, cover and cook until the broccoli and bell peppers are soft.  Add the sauce mixture.  Stir and let sit for another 5 minutes.
Serve with fresh basil, sesame seeds or what have you.
