Happy Friday!  Don’t know about you, but this week  just went soooo slow.
This week was Kylie girl’s 3rd birthday (insert tears here) I can’t believe I have a 3 YEAR OLD!  Am I really that old???  Well in spite of the reminder that life goes too fast, we had fun celebrating her birthday.  Now as she’s getting older, she’s becoming more opinionated (yikes).  I started planning to make a cute 3 layer cake with little accents and and frilly decorations etc and I was already planning the photo shoot 😉  But my girl had to be original and CUPCAKES it was.

she originally wanted green frosting,(eeeeh) fortunately she changed to white.  But I was like ok, it’s her birthday and my cake shoot can wait 🙂
I’m so happy I let her choose, not only childhood flies by and these little decisions although small, mean the world to her.  And I ended up discovering a new way to make cupcakes that I’m going to share with ya’ll today!

1 Box cake mix (I used Betty Crocker)
follow directions as needed

*Now here’s the kicker, mix all ingredients WITHOUT the egg, then add it last as to not beat it for too long

COCONUT CREAM FROSTING
1/2 C coconut oil (room temperature-not melted or hard)
1/4 c cream cheese
1 tsp milk
1 c powder sugar (if more is needed add 1 tbls at a time)

Directions

Mix batter according to box instructions
spoon batter into muffin tin (this goes without saying but be sure to use cupcake liners…they make a difference!)
Fill muffin tin a little over 3/4 the way full, almost to the top…this will ensure tall, professional looking muffins

bake as directed

immediately remove muffins and place on cooling rack in the freezer for 10-15 minutes or until no longer hot to the touch-but NOT frozen hard.

Frosting

In separate bowl mix all ingredients for frosting then chill in the freezer for 10 minutes

Promptly remove cupcakes and frosting then pipe frosting on cupcakes, add sprinkles and VOILA!

EAT AND ENJOY!
For best lasting results keep remaining cupcakes in fridge 🙂
