Have you ever had the soup from Olive Garden?  It’s freakin’ delicious!  And guess what, it’s SOO easy to make.

Last weekend was the semi annual women’s General Conference.  It was broadcast and me and some friends got together to have a potluck dinner and watch it.  My friend Mary made this soup.  I had 3 bowls, no joke!  So of course i had to get the recipe from her.  It’s typically made on a stove top, but since we don’t currently have one (just a skillet) I had to improvise and make it work in a crock pot.  Which it actually turned out even more flavorful.
Today was our General Conference and it was raining and storming outside.  The PERFECT soup day.  Daniel was hooked.  To be honest I couldn’t stop eating it either.  We finished the entire pot full in one day!  How embarrassingly awesome is that!? lol  Anyway, HERE IT IS!

YOU WILL NEED

2 cups of spinach

2 bunches of Kale + the stems

1 lb ground sausage

1/4 c milk
(really any milk-I used soy because that’s all we had today)

1 yellow chopped onion

3 chopped red potatoes

3 cloves garlic or 2 tsp minced garlic

3 tbls olive oil

2 boxes vegetable stock

WHAT TO DO 🙂

Sautee onions, garlic and sausage in the olive oil (if your pan/skillet is large enough add the greens as well)
once onions become translucent move contents to slow cooker.

Add all other ingredients (except for the milk) and cook on low for 3 hours or until potatoes are soft
Add the milk and mix contents then SERVE AND ENJOY!

You can add salt and pepper to taste…the sausage already has tons of flavor so I find it’s not really necessary.
