Coconut Cream Valentine Cookie

:: RECIPE ::

1/4 c Coconut oil (softened)
1/2 c Butter (softened)
3/4 c granulated coconut sugar (can also use regular)
2 eggs
1 tsp vanilla extract
2 Tbls dry vanilla pudding mix (optional)
2  1/4 tsp baking powder
1/2 tsp salt
2  1/4 cups flour

:: THE HOW-TO ::

use electric mixer to combine butter, oil and sugar.
Add the eggs and vanilla extract.

Add your pudding mix, salt, baking powder and flour and use wooden spoon to combing all ingredients until it is no longer lumpy 🙂
Next flatten dough on parchment or wax paper to about 1/2 inch thick.  Then cut into desired shapes.  (You can also just roll into loose balls of dough).

Bake at 350 for 8 minutes, or until edges begin to turn a light golden brown.

ICING on the “COOKIE”
Use electric mixer to combine all ingredients until smooth.

3 Tbl Coconut oil (softened NOT melted)
3 Tbls coconut milk (can really use any milk)
3 Tbls cream cheese (plain)
2  1/4 cups confectioners sugar (powdered sugar)

*Optional-add food coloring.  I divided the frosting in half to keep some white, and used 2 drops of red food coloring to get the pink shade.
