I woke up this morning and wanted some muffins. I figured the timing couldn’t have been more perfect, because my bananas are past the stage when I prefer eating them. But not too ripe too where they are basically liquefied GROSS! I owe my sudden craving to how much I’ve been watching Anne Of Green Gables lately. That movie not only leaves me wanting to live in a farm house in the country, but wanting to bake. However, I knew I would feel gross the rest of the day if I ate baked sweets frist thing in the morning. So I decided to experiment and make them more like a hearty breakfast than a sweet. Here’s what I came up with. The Greek yogurt contains protein and very little sugar. This replaces the butter in this recipe. Also honey is a natural sweetener and it’s stronger, so you don’t need to use that much. I used half wheat flour, so it’s a little less processed. Needsless to say they were a success. Daniel liked them, and Kylie LOOOOVED them.
She loves doing mom things with me. Baking, cooking, laundry the dishes. She’s such a sweet little helper, and I do my best not to discourage her from helping. When I was younger I noticed a trend. Little kids always want to help. But then as they near preteen years, sometimes sooner, you have to twist their arm just to get them to take their plate to the sink. I had an epiphane that maybe because parents often tell their kids “no” when they are trying to help around the house-And I mean I can’t blame, sometimes you need to get things done quickly, and the child is just making more working without realizing it-that after awhile the kids associate negativity with “helping” Even though she sometimes makes 5 minute tasks into 10, I want her to enjoy helping me, so I savor these precious little moments 🙂 Ps it makes life with a toddler so much better.
3 BANANAS
1 EGG
1 TBL VANILLA
1 TBL ALMOND MILK
1/2 CUP HONEY
1/2 CUP GREEK YOGURT (PLAIN OR VANILLA)
1 TBL. GRAPESEED OIL (COCONUT OR OLIVE IS GOOD, TOO)
1/4 TSP SALT
1 TSP BAKING SODA
1/2 CUP WHEAT FLOUR
1 CUP REGULAR FLOUR
1/2 BAG CHOC CHIPS
DASH OF CINNAMON
Preheat oven to 350 F
*Makes 12 muffins
This recipe uses the “Muffin Method” in other words, combing wet ingredients first, then adding dry ingredients.
Start by mashing the bananas in large bowl (sometimes using a whisk or fork is easier for this part) NOTE: the bananas do not have to be completely creamy, I like a few solid banana pieces. Next you will add the vanilla, milk, egg, oil, yogurt, honey. Mixing the batter lightly after each addition. Next add flours, salt, baking soda and cinnamon all at once to the wet mixture. NOTE: Do not over mix, muffins are better when batter is a little lumpy. Lastly, add the chocolate chips.
Distribute batter evenly into lightly greased muffin tin.
I like my muffins big, full and scrumptious looking. So don’t be shy, fill the muffin tin all the way up.
Bake at 350 for 15-20 minutes. Or until you can insert a toothpick. If the toothpick is just ever so slightly wet, that’s fine! Let the muffins sit in the tin (outside the oven) for a few minutes, and they will finish cooking. This will make the muffins extra moist.
