A NOT so UN-healthy treat
It’s day 3 of my new fitness regime! And on top of that, I’ve been managing to eat healthy…I mean I’ve never been one for tons of junk food anyway, but I do have a weakness for baked goods & ice cream. But ice cream I haven’t really had much of since Kylie was born (every time I eat it, then nurse, she throws up 🙁 ), and this last week I haven’t had any baked treats…and just maybe that’s because the week before I had a ridiculous amount haha.
I visited my friend Angelica last week, and she gave me TONS of new recipes to try (she’s also the one who taught me how to make tortillas a while back, and I’ll be sharing that on here soon as well). One of them was RICE PUDDING!!! Like the bread (if you read that post from a couple days ago, if not you can find it here) I always thought rice pudding was supposed to be like insanely difficult-maybe that’s because you never really see much of it anywhere-but surprise, surprise! It’s simple. I’ve included some pics (sorry they’re kinda dark, because I made this at night), so they should help, but even then, I was able to do it just with Angelica explaining it to me, it’s seriously that easy 🙂
You’ll need
1 cup white rice
2 cups water
1 cinnamon stick
1/2 can evaporated milk
(1/2 can sweetened condensed milk too, if you want it really sweet)
Combine the rice, water, cinnamon into a sauce pan, cover and heat on medium. (You’re basically just cooking it like you would regular rice)
When the water is almost boiled completely down, remove the cinnamon, add the milk (and sweetened condensed if you choose), lower the heat, cover and cook until at the desired consistency.
After that just treat it like oatmeal. You can add brown sugar or agave nectar, raisins, berries, granola, whatever your heart desires!
That easy! ENJOY!
***Be careful when buying the cinnamon. In one store it was almost $3, then in another (for the exact same package, brand, amount, EVERYTHING) it was 99 cents. So yeah, I don’t get it, but just so you’re aware 🙂
